I believe red is Edward's least favorite color because that is the color of blood and it would remind him of his monstrosity, himself, and also because that is the color of the one substance he wants most in the world, Bella's blood, and for that he thinks of himself as a monster no matter how she sees him.

I think it's black because it's the color his eyes become when he's hungry. He hunts when he's hungry, which means blood and blood would remind him of the deliciousness of Bella and back when he was a human hunter. I think he despises black the most.
