Like she said, she wouldn't want to spend her honeymoon writhing in pain. Even if they hadn't been planning on having a real honeymoon, turning her then would spoil the general idea of it. And possibly Edward wanted the rest of his family there when he turned her to interfere just in case he couldn't stop drinking.
