I think all three movies really show Will's development from a somewhat naive, but still brave, young man into the savvy pirate he becomes in the end. He always follows his heart and is extremely loyal to those he cares about, going to un-heard of lengths to keep his promises and protect the people he loves, especially his father and Elizabeth. The most noteble difference, I think, is that he is definitely not as concerned with breakin the law as he was in the first movie, and thinks more like Jack.

All three! It's hard to choose just one.
