I had to really think about this one when I found out the novel was going to be made into a movie. Doc is described as Tall, slender with light brown o dark blond hair and thin features. I finally decided Paul Bettany would be the best fit. He is a British actor (but can do an American accent) and a lot of people know him from A Knight's Tale where he played Chaucer.
