Jacob doesn't have to die. He can live as long as Renesmee does. He will only start aging again when he decides to no longer change into a wolf again. Which means they can be together forever. If Renesmee dies in a fight or for some reason he can choose to age again and die. And if Jacob dies then she will probably go to the Volturi and ask them to kill herself like her daddy.
