I don't think Liam's surname is ever mentioned. The only time I think it may have been shown is possibly written on his gravestone.
O'Connor is just an assumption a lot of fanfiction writters make when they feel they need to guess a surname for him. Personally, I doubt he'd have been O'Connor though. He wouldn't have named Connor as Connor if the boy's name would then have technically been Connor O'Connor.
